As the liquor reaches strike
temperature, the water system is
charged by re-circulating through the
system and back to the HLT.
The valve is then opened to begin the
“dough-in” process.
The heated false bottom will maintain
the temperature. To ensure an even
heating, the wort can be re-circulated
during the mash.
Once the grain bed is set, the floating
re-circulation / sparge top is put in
place
