SPARGING...

When the mash / conversion is
complete, the second peristaltic pump
is turned on. The two pumps maintain
the mash level during the entire fly
sparging period.
The wort is lightly pumped to the kettle
free from any grains or debris.
When sparging is complete, and the
kettle is heating to a boil, you can get
a head start on cleaning. The excess
wort in the mash tun and the extra
liquor can be drained in place. The
mash tun can then be removed for
dumping / cleaning.
